No long story here. This recipe came out of a craving and a half-empty fridge. It’s a little different than the usual, with a more savory flavor, a touch lighter, and a sneaky way to work in some extra veggies. Still ultra-creamy, somewhere between mac & cheese and soup — the kind you’ll keep going back for.
The FH Philosophy
The ingredients and instructions here are uncomplicated, because cooking doesn’t need to feel like homework. Taste as you go. Adjust however you want. Make it yours.
What you’ll need:
- 1 bag of frozen cauliflower
- (Optional) a half bag of frozen broccoli
- 1 chopped onion
- 1 spoonful of Better than Bouillon (“no chicken” is our choice, but any is ok!)
- 1-2 cups shredded sharp cheddar cheese (we won’t tell if you add extra)
- Seasoning: salt, pepper, red pepper flake, garlic powder, dried mustard (or whatever you like)
- 1 box of dried pasta, you choice of shape but cavatappi seems the most fun
- (Optional) Toppings & mix-ins: some of our favorites are a small can of diced green chili, frozen green peas, or some extra cheese like parmesan
Put it together:
- In a medium-large pot, toss in the onion, cauliflower, Better than Bouillon, and broccoli/spinach if you’re using it. Add just enough water to cover the veggies, this is going to be at least a few cups. Cover, boil, and cook until soft (about 10+ minutes). No need to babysit.
- Turn off the heat and use an immersion blender to puree the heck out of it until smooth and creamy (if you don’t have that, a blender or food processor will work, just cool it down a little first.) Add more water or milk if it’s too thick – remember, pasta will soak some up. You’ll want it to be a little thinner than cheese sauce.
- Stir in shredded cheese and seasonings. Blend again until it’s silky. Taste, adjust, smile. If using mix-ins, toss them in and warm everything together.
- In a separate pot, boil your pasta water. Salt it generously (like a spoonful, don’t skimp). Cook pasta slightly underdone, drain, and fold it into the sauce.
- Let the pasta and sauce hang out for a few minutes. Then grab a spoon, fork, or just the pot and go for it.
